Coconut Cake with Mango Mousse and Toasted Almonds

A moist and flavorful coconut cake is paired with a refreshing mango mousse and crunchy toasted almonds for a truly tropical dessert experience.

Ingredients:

For the cake:

  • 1 1/2 cups unsweetened shredded coconut
  • 1 cup granulated sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup full-fat coconut milk
  • 1 teaspoon vanilla extract

For the mango mousse:

  • 2 ripe mangos, diced
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract

For the toasted almonds:

  • 1 cup sliced almonds
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions

Make the cake:

  1. Preheat oven to 350°F (180°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together coconut, sugar, baking powder, and salt.
  3. In a large mixing bowl, using an electric mixer, beat eggs until light and fluffy.
  4. Add the softened butter to the egg mixture and mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with coconut milk, beginning and ending with dry ingredients.
  6. Stir in vanilla extract.
  7. Divide batter evenly among prepared pans and smooth tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Make the mango mousse:

  1. In a blender or food processor, puree mangos until smooth.
  2. In a medium bowl, beat cream cheese until smooth.
  3. Add granulated sugar, honey, and vanilla extract to the cream cheese mixture and mix until fully incorporated.
  4. Stir in the mango puree.

Make the toasted almonds:

  1. Preheat oven to 350°F (180°C).
  2. Place sliced almonds on a baking sheet.
  3. Drizzle with butter and sprinkle with salt.
  4. Bake for 5-7 minutes or until lightly toasted.

Assembly

  1. Once cakes are completely cool, place one cake layer on a serving plate.
  2. Spread a thick layer of mango mousse over the top of the cake layer.
  3. Sprinkle toasted almonds over the mousse.
  4. Repeat this process with remaining two cake layers.
