Citrus Glazed Salmon with Roasted Sweet Potatoes and Broccoli

A vibrant and healthy weeknight dinner featuring succulent salmon glazed with a tangy citrus sauce, roasted sweet potatoes for sweetness, and tender broccoli florets.

Ingredients:

  • 1 pound salmon fillet, skin on
  • 2 medium sweet potatoes, peeled and diced
  • 1 head broccoli, cut into florets
  • 1/4 cup olive oil
  • Juice of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes and broccoli with 2 tablespoons of olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. In a small bowl, whisk together the orange juice, lemon zest, honey, soy sauce, garlic powder, salt, and pepper to create the glaze.
  4. Place the salmon fillet on a separate baking sheet lined with parchment paper. Brush generously with the citrus glaze.
  5. Roast the sweet potatoes and broccoli for 20-25 minutes, or until tender and slightly browned.
  6. During the last 10 minutes of roasting, place the salmon in the oven and bake until cooked through, about 12-15 minutes.
  7. Serve the glazed salmon immediately over the roasted sweet potatoes and broccoli.
