Ingredients:
- 1 pound salmon fillet, skin on
- 2 medium sweet potatoes, peeled and diced
- 1 head broccoli, cut into florets
- 1/4 cup olive oil
- Juice of 1 orange
- Zest of 1 lemon
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- Salt and black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the sweet potatoes and broccoli with 2 tablespoons of olive oil, salt, and pepper. Spread evenly on a baking sheet.
- In a small bowl, whisk together the orange juice, lemon zest, honey, soy sauce, garlic powder, salt, and pepper to create the glaze.
- Place the salmon fillet on a separate baking sheet lined with parchment paper. Brush generously with the citrus glaze.
- Roast the sweet potatoes and broccoli for 20-25 minutes, or until tender and slightly browned.
- During the last 10 minutes of roasting, place the salmon in the oven and bake until cooked through, about 12-15 minutes.
- Serve the glazed salmon immediately over the roasted sweet potatoes and broccoli.
