Cinnamon Swirl Waffles with Apple Compote and Whipped Cream

Ingredients:
For the Waffles:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup milk
- 4 tablespoons unsalted butter, melted
- 1 teaspoon ground cinnamon
For the Cinnamon Swirl:
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, softened
- 1 egg yolk
- Confectioners' sugar, for dusting
For the Apple Compote:
- 2-3 apples, peeled and sliced (Granny Smith or other firm variety)
- 1 tablespoon granulated sugar
- 1 tablespoon all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
For the Whipped Cream:
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
Instructions
Make the Waffles:
- Preheat your waffle iron to medium-high heat.
- In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In a separate bowl, whisk together eggs, milk, melted butter, and ground cinnamon.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- The batter should still be slightly lumpy.
Make the Cinnamon Swirl:
- In a small bowl, mix together sugar, flour, and cinnamon.
- Add the softened butter to the sugar mixture and mix until crumbly.
- Beat in the egg yolk until smooth.
- Use this mixture as the topping for your waffles.
Make the Apple Compote:
- In a medium saucepan, combine sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt.
- Cook over medium heat, stirring occasionally, until the apples are tender and the liquid has thickened, about 15-20 minutes.
Assemble and Serve:
- Cook waffles according to your waffle iron's instructions.
- Top each waffle with a dollop of whipped cream (see below).
- Spoon warm apple compote over the top of the whipped cream.
- Sprinkle confectioners' sugar over the top, if desired.
Make the Whipped Cream:
- In a medium bowl, whip heavy cream until soft peaks form.
- Gradually add granulated sugar and vanilla extract, continuing to whip until stiff peaks form.
Variations
- Substitute chopped nuts or dried cranberries for added texture and flavor.
- Use different types of milk, such as almond or soy milk, for a non-dairy version.
- Add a sprinkle of cinnamon or nutmeg on top of the whipped cream for extra flavor.
