Cinnamon Swirl Biscotti-Style Apple Pie

A twist on the classic apple pie, with a cinnamon swirl biscotti-inspired crust.

Ingredients:

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon ground cinnamon

For the Filling:

  • 6-8 medium-sized apples, peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a medium-sized bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add in the softened butter and mix until a dough forms.
  4. Beat in the egg and cinnamon until well combined.
  5. Divide the dough in half and roll out each half into a rectangle that is about 1/4-inch thick.
  6. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt.
  7. Place one of the dough rectangles on a baking sheet lined with parchment paper and top with the apple mixture.
  8. Roll out the second dough rectangle to match the first one and place it on top of the apple filling.
  9. Press the edges of the two doughs together to seal the pie.
  10. Use a sharp knife or pastry cutter to create a decorative border around the edge of the pie.
  11. Bake for 45 minutes, or until the crust is golden brown.
