Cinnamon Swirl Biscotti
Ingredients
- 2 1/4 cups (285g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup (200g) granulated sugar
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 2 tablespoons ground cinnamon
- 1/2 cup (115g) unsalted butter, softened
Instructions
Step 1: Preheat and Prepare
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
Step 3: Cream Sugar and Eggs
In a large bowl, use an electric mixer to cream sugar and eggs until light and fluffy. Add vanilla extract and mix well.
Step 4: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 5: Add Butter and Mix
Add softened butter and mix until a dough forms.
Step 6: Shape Dough
On a lightly floured surface, shape the dough into a long log about 1 inch (2.5 cm) in diameter.
Step 7: Roll and Fold
Roll the dough into a tight log, then roll it back up with the seam side down. Repeat this process two more times.
Step 8: Bake
Place the log on the prepared baking sheet and bake for 25-30 minutes or until lightly golden.
Step 9: Cool and Slice
Let cool for 10 minutes before transferring to a wire rack to cool completely. Once cooled, use a serrated knife to slice into 1/2-inch (1 cm) thick slices.
Step 10: Bake Again
Place the biscotti on the baking sheet and bake for an additional 12-15 minutes or until crispy and golden.
Step 11: Serve
Serve with your favorite coffee, tea, or wine.
