Cinnamon Swirl Apple Crumble Biscotti
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 2 apples, peeled and diced (Granny Smith or other tart variety)
- Cinnamon crumble topping:
- 1/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
Instructions:
Preheat and Prep
Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
Cinnamon Swirl Biscotti Dough
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, use an electric mixer to beat the sugar until lightened in color, about 2-3 minutes. Beat in eggs one at a time, followed by cinnamon.
Gradually mix in the dry ingredients until just combined, being careful not to overmix.
Stir in softened butter until just combined.
Cinnamon Swirl Layer
Transfer half of the biscotti dough onto a lightly floured surface and roll out into a rectangle about 1/4-inch thick. Drizzle with 1 tablespoon cinnamon sugar (see note).
Roll up the dough tightly, starting from one long edge. Repeat with the remaining dough.
Place the rolled dough on the prepared baking sheet, leaving about 2 inches between each roll.
Cinnamon Crumble Topping
In a small bowl, combine flour, granulated sugar, brown sugar, cinnamon, and salt. Add cold butter and use your fingers or a pastry blender to work it into the dry ingredients until crumbly.
Top each rolled biscotti dough with about 1-2 tablespoons of cinnamon crumble topping, depending on desired thickness.
Bake
Bake for 25-30 minutes, or until golden brown.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Note: Cinnamon sugar can be made by mixing together equal parts granulated sugar and ground cinnamon. Store in an airtight container at room temperature for up to 6 months.
Variations:
- To enhance the apple flavor, add 1-2 diced apples into each roll of biscotti dough before topping with cinnamon crumble.
- Substitute some or all of the sugar with honey or maple syrup for added depth of flavor.
