Cinnamon Apple and Oatmeal Crumble Bars

Ingredients:
For the crust:
- 1 cup rolled oats
- 1/2 cup packed light brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
For the filling:
- 3-4 medium-sized apples, peeled and sliced
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
For the crumble topping:
- 1/2 cup rolled oats
- 1/4 cup packed light brown sugar
- 1/4 cup all-purpose flour
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/2 teaspoon ground cinnamon
Instructions:
Preheat your oven to 375°F (190°C).
Prepare the crust:
In a medium bowl, whisk together the oats, brown sugar, flour, baking powder, and salt. Add the cold butter and use a pastry blender or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
Press the crust mixture evenly into the bottom of an 8-inch square baking dish.
Line the dish with parchment paper for easy removal.
Prepare the filling:
In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Toss until the apples are evenly coated with the dry ingredients.
Spread the apple mixture evenly over the crust.
Make sure to spread it out in an even layer, leaving a 1/2-inch border around the edges.
Prepare the crumble topping:
In a separate medium bowl, combine the rolled oats, brown sugar, flour, and cinnamon. Add the cold butter and use a pastry blender or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
Sprinkle the crumble topping evenly over the apple filling.
Make sure to spread it out in an even layer, leaving a 1/2-inch border around the edges.
Bake for 35-40 minutes, or until the crust is golden brown and the apples are tender.
Rotate the dish halfway through baking.
Allow the bars to cool completely in the pan before cutting into squares and serving.
