Cinnamon Apple Galette with Pistachio Crust

Ingredients:
- 2 large apples, peeled and sliced (Granny Smith or other tart variety)
- 1/4 cup granulated sugar
- 2 tbsp ground cinnamon
- 1 tsp allspice
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 egg, beaten (for egg wash)
- Pistachio Crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup confectioners' sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup chopped fresh pistachios
Instructions:
Prepare the Filling:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine sliced apples, granulated sugar, cinnamon, allspice, and salt. Mix until the apples are evenly coated with the dry ingredients.
Prepare the Pistachio Crust:
- In a separate bowl, whisk together flour, confectioners' sugar, and melted butter until crumbly.
- Stir in chopped pistachios.
Assemble the Galette:
- On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch (6 mm). Transfer the dough to a baking sheet lined with parchment paper.
- Arrange the apple filling in the center of the dough, leaving a 1-inch border around the edges.
- Fold the edges of the dough over the apples, pressing gently to seal. Brush the crust with egg wash and sprinkle with granulated sugar.
Bake the Galette:
- Bake for 40-45 minutes or until the crust is golden brown and the apples are tender.
- Remove from oven and let cool on a wire rack for at least 30 minutes before serving.
