Cinnamon Apple Galette with Pecan Crust and Vanilla Ice Cream

Ingredients:
For the Pecan Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1/4 cup finely chopped pecans
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 1/4 cup unsalted butter, melted
For the Apple Filling:
- 6-8 medium-sized apples, peeled and sliced
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon vanilla extract
For the Vanilla Ice Cream:
- 1 1/2 quarts vanilla ice cream (homemade or store-bought)
Instructions:
Make the Pecan Crust:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, brown sugar, granulated sugar, chopped pecans, salt, cinnamon, nutmeg, and cardamom.
- Pour in the melted butter and stir until the mixture forms a crumbly dough.
- Turn the dough out onto the prepared baking sheet and bake for 15-20 minutes, or until lightly golden brown.
- Allow the crust to cool completely on the baking sheet.
Make the Apple Filling:
- In a large bowl, combine sliced apples, granulated sugar, flour, cinnamon, salt, nutmeg, and vanilla extract. Mix until the apples are evenly coated with the dry ingredients.
- Set the apple mixture aside for at least 15 minutes to allow the flavors to meld together.
Assemble and Bake the Galette:
- On a lightly floured surface, roll out the cooled pecan crust to a thickness of about 1/8 inch (3 mm).
- Transfer the rolled-out crust to a 9-inch (23 cm) round baking dish or a large cast-iron skillet.
- Arrange the apple mixture in a concentric circle pattern, leaving a 1-inch (2.5 cm) border around the edges of the crust.
- Fold the edges of the crust over the apples to create a decorative border. Brush the crust with a little bit of milk or beaten egg for a golden glaze.
- Bake the galette in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the crust is golden brown and the apples are tender.
Serve with Vanilla Ice Cream:
- Allow the galette to cool slightly on a wire rack before serving.
- Scoop vanilla ice cream alongside each slice of the galette.
- Garnish with additional chopped pecans and cinnamon sticks, if desired.
