Cinnamon Apple Galette with Pecan Crust and Brown Sugar Ice Cream

A twist on the classic apple galette, featuring a crunchy pecan crust and served with a scoop of brown sugar ice cream.

Ingredients

For the crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup pecans, finely chopped
  • 1/2 cup unsalted butter, chilled and cut into small pieces

For the filling:

  • 6-8 medium-sized apples, peeled and sliced
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons unsalted butter, melted

For the brown sugar ice cream:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. To make the crust, combine the flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt in a medium-sized bowl. Stir until well combined.
  3. Add the chopped pecans and cold butter to the dry ingredients. Use a pastry blender or your fingers to work the butter into the mixture until it resembles coarse crumbs.
  4. Press the crust mixture evenly into the bottom of a 9-inch (23cm) tart pan with a removable bottom.
  5. Bake the crust for 20-25 minutes, or until lightly golden brown.
  6. While the crust is baking, prepare the filling. Combine the sliced apples, granulated sugar, cinnamon, and vanilla extract in a large bowl. Toss until the apples are evenly coated with the dry ingredients.
  7. Sprinkle the cornstarch over the apple mixture and toss again to coat.
  8. Once the crust is ready, arrange the apple slices on top of the crust, leaving a 1-inch (2.5cm) border around the edges.
  9. Fold the edges of the crust up over the apples, pressing them gently into place.
  10. Brush the melted butter evenly over the crust and apples.
  11. Return the galette to the oven and bake for an additional 25-30 minutes, or until the apples are tender and the crust is golden brown.
  12. While the galette is baking, prepare the brown sugar ice cream. Combine the heavy cream, whole milk, granulated sugar, light brown sugar, and vanilla extract in a medium-sized bowl. Whisk until the sugars have dissolved.
  13. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  14. Once the galette is ready, let it cool for 10-15 minutes before serving. Serve warm with a scoop of brown sugar ice cream on top.

Variations

  • To add some crunch to your galette, sprinkle a handful of chopped pecans over the apples before baking.
  • If you prefer a crisper crust, bake it for an additional 5-10 minutes.
  • Experiment with different types of nuts or spices in the crust mixture to create unique flavor combinations.
