Cinnamon Apple Galette with Pecan Crust and Brown Sugar Ice Cream
Ingredients
For the crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup pecans, finely chopped
- 1/2 cup unsalted butter, chilled and cut into small pieces
For the filling:
- 6-8 medium-sized apples, peeled and sliced
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 tablespoons unsalted butter, melted
For the brown sugar ice cream:
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 2 tablespoons light brown sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- To make the crust, combine the flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt in a medium-sized bowl. Stir until well combined.
- Add the chopped pecans and cold butter to the dry ingredients. Use a pastry blender or your fingers to work the butter into the mixture until it resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of a 9-inch (23cm) tart pan with a removable bottom.
- Bake the crust for 20-25 minutes, or until lightly golden brown.
- While the crust is baking, prepare the filling. Combine the sliced apples, granulated sugar, cinnamon, and vanilla extract in a large bowl. Toss until the apples are evenly coated with the dry ingredients.
- Sprinkle the cornstarch over the apple mixture and toss again to coat.
- Once the crust is ready, arrange the apple slices on top of the crust, leaving a 1-inch (2.5cm) border around the edges.
- Fold the edges of the crust up over the apples, pressing them gently into place.
- Brush the melted butter evenly over the crust and apples.
- Return the galette to the oven and bake for an additional 25-30 minutes, or until the apples are tender and the crust is golden brown.
- While the galette is baking, prepare the brown sugar ice cream. Combine the heavy cream, whole milk, granulated sugar, light brown sugar, and vanilla extract in a medium-sized bowl. Whisk until the sugars have dissolved.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Once the galette is ready, let it cool for 10-15 minutes before serving. Serve warm with a scoop of brown sugar ice cream on top.
Variations
- To add some crunch to your galette, sprinkle a handful of chopped pecans over the apples before baking.
- If you prefer a crisper crust, bake it for an additional 5-10 minutes.
- Experiment with different types of nuts or spices in the crust mixture to create unique flavor combinations.
