Cinnamon Apple Galette with Pecan Crumble and Vanilla Ice Cream

A sweet and crumbly cinnamon apple galette topped with a crunchy pecan crumble and served with a scoop of creamy vanilla ice cream.

Cinnamon Apple Galette with Pecan Crumble and Vanilla Ice Cream

Ingredients:

For the Pastry Dough:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup cold unsalted butter, cut into small pieces
  • 1/4 cup ice-cold water
  • 1 egg, beaten (for egg wash)

For the Apple Filling:

  • 6-8 medium-sized apples, peeled and sliced
  • 2 tbsp granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg

For the Pecan Crumble:

  • 1 cup chopped pecans
  • 1/4 cup light brown sugar
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cut into small pieces

Instructions:

  1. Make the Pastry Dough:

    • In a large mixing bowl, combine flour and salt.
    • Add cold butter and use a pastry blender or your fingertips to work it into the flour until the mixture resembles coarse crumbs.
    • Gradually add ice-cold water while stirring with a fork until the dough comes together.
    • Turn the dough out onto a lightly floured surface and knead a few times until smooth.
    • Form a flat disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Apple Filling:

    • In a separate mixing bowl, combine sliced apples, granulated sugar, cinnamon, and nutmeg. Toss until the apples are evenly coated with the dry mixture.
    • Let it sit for about 15-20 minutes to allow the apples to release their juices.
  3. Make the Pecan Crumble:

    • In a small bowl, combine chopped pecans, light brown sugar, and salt. Mix well until combined.
    • Add cold butter and use your fingertips or a pastry blender to work it into the pecan mixture until crumbly.
  4. Assemble the Galette:

    • On a lightly floured surface, roll out the chilled pastry dough to about 1/8 inch thickness.
    • Transfer the dough to a baking sheet lined with parchment paper and arrange the apple filling in the center of the dough, leaving a border around it.
    • Fold the edges of the dough over the apples, pressing gently to seal.
  5. Top with Pecan Crumble:

    • Sprinkle the pecan crumble evenly over the top of the galette.
    • Brush the edges of the pastry with beaten egg for a golden glaze.
  6. Bake:

    • Preheat your oven to 375°F (190°C).
    • Bake the galette for about 45-50 minutes or until the pastry is golden brown and the filling is bubbly.
    • Rotate the baking sheet halfway through the baking time to ensure even browning.
  7. Serve with Vanilla Ice Cream:

    • Allow the galette to cool slightly before serving warm with a scoop of creamy vanilla ice cream on top.
