Cinnamon Apple Galette with Oat Crust and Brown Sugar Ice Cream
Ingredients
- 2 large apples, peeled and sliced
- 1/4 cup granulated sugar
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 egg, beaten (for brushing crust)
- Brown Sugar Ice Cream (recipe below)
Oat Crust
- In a medium bowl, whisk together oats, brown sugar, and salt.
- Add cold butter and use a pastry blender or your fingers to work it into the dry ingredients until mixture resembles coarse crumbs.
Assembly and Baking
- Preheat oven to 375°F (190°C).
- In a large bowl, combine sliced apples, granulated sugar, cinnamon, nutmeg, and salt. Mix well to coat.
- On a lightly floured surface, roll out oat crust to a thickness of about 1/8 inch.
- Transfer apple mixture to the center of the dough, leaving a 2-inch border around it.
- Fold edges of the dough up over the filling, pressing gently to seal.
- Brush beaten egg over the crust and sprinkle with additional brown sugar if desired.
- Bake for 40-45 minutes or until crust is golden brown.
Brown Sugar Ice Cream
- In a medium saucepan, combine 1 cup heavy cream, 1/2 cup granulated sugar, and 1 tsp vanilla extract. Bring to a simmer over medium heat.
- Reduce heat to low and cook for an additional 5-7 minutes or until mixture is reduced slightly and syrupy.
- Remove from heat and stir in 1/4 cup brown sugar until dissolved.
- Allow mixture to cool completely before churning in an ice cream maker according to manufacturer's instructions.
Serve
- Slice warm galette and serve with a scoop of Brown Sugar Ice Cream.
