Ingredients

For the Pastry Crust:

  • 2 1/4 cups all-purpose flour
  • 1 tsp salt
  • 1 cup cold unsalted butter, cut into small pieces
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon

For the Apple Filling:

  • 6-8 medium-sized apples, peeled and sliced
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

For the Cardamom Crumble:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt

For the Vanilla Ice Cream:

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

Make the Pastry Crust:

  1. In a large mixing bowl, combine flour and salt.
  2. Add cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  3. Stir in granulated sugar and cinnamon until well combined.
  4. Gradually pour in ice-cold water while stirring with a fork until dough comes together in a ball.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Apple Filling:

  1. In a separate mixing bowl, combine sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt.
  2. Let the mixture sit for about 15-20 minutes to allow the apples to release their juices.

Make the Cardamom Crumble:

  1. In a small bowl, whisk together flour, brown sugar, ground cardamom, and salt.
  2. Add cold butter and use your fingers or a pastry blender to work it into the dry ingredients until crumbly.

Assemble the Galette:

  1. On a lightly floured surface, roll out the chilled pastry dough to a thickness of about 1/8 inch.
  2. Transfer the dough to a baking sheet lined with parchment paper, leaving a 1-inch border around the edges.
  3. Arrange the apple filling in a concentric circle pattern within the dough, leaving a small border at the center.

Top with Cardamom Crumble:

  1. Evenly spread the cardamom crumble mixture over the apple filling, making sure to stay within the borders.
  2. Fold the pastry edges up over the filling to form a crust, pressing gently to seal.

Bake and Serve:

  1. Preheat oven to 375°F (190°C).
  2. Bake the galette for about 40-45 minutes or until the crust is golden brown and the apples are tender.
