A beautiful and delicious twist on the classic apple galette, this recipe features caramelized pineapple and toasted coconut flakes.

Ingredients

  • 1 1/2 sticks (6 tablespoons) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups mixed apples, peeled and sliced (Granny Smith, Fuji, and Honeycrisp)
  • 1 cup pineapple chunks
  • 1 tablespoon unsalted butter
  • 1 cup coconut flakes
  • Confectioners' sugar, for dusting

Instructions

Step 1: Make the Pastry Dough

In a large mixing bowl, combine:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces

Use your fingers or a pastry blender to work the butter into the flour until it resembles coarse crumbs. Add:

  • 1/4 cup ice water
  • 1 tablespoon vinegar

Mix until a dough forms.

Step 2: Make the Filling

In a separate mixing bowl, combine:

  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups mixed apples, peeled and sliced (Granny Smith, Fuji, and Honeycrisp)
  • 1 cup pineapple chunks

Mix until the apples are well coated with sugar and spices.

Step 3: Assemble the Galette

Roll out the pastry dough to a thickness of about 1/8 inch. Place on a baking sheet lined with parchment paper. Arrange the apple mixture in a circular pattern, leaving a 2-inch border around the edges. Fold the edges over the filling to form a crust.

Step 4: Caramelize the Pineapple

In a small saucepan, combine:

  • 1 cup pineapple chunks
  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar

Cook over medium heat until the pineapple is caramelized and tender. Set aside to cool.

Step 5: Add the Coconut Flakes

Sprinkle toasted coconut flakes over the top of the galette, leaving a small border around the edges.

Step 6: Bake the Galette

Bake at 375°F (190°C) for 45-50 minutes or until the crust is golden brown. Rotate the baking sheet every 15 minutes to ensure even cooking.

Step 7: Serve and Enjoy!

Remove from the oven and let cool slightly. Dust with confectioners' sugar and serve warm, topped with caramelized pineapple and toasted coconut flakes.
