Cinnamon Apple Crumble Muffins
Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 apples, peeled and diced (about 2 cups)
- Oat crumble topping (see below)
Instructions
Preheat the oven
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
Prepare the batter
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In a large bowl, whisk together melted butter, milk, eggs, cinnamon, and nutmeg.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Gently fold in diced apples.
Prepare the oat crumble topping
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup chopped walnuts (optional)
- 1 tablespoon cold unsalted butter, cut into small pieces
Mix all the ingredients together until they resemble coarse crumbs. Set aside.
Assemble and bake the muffins
- Divide the batter evenly among the muffin cups.
- Top each muffin with a generous amount of oat crumble topping.
- Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Cool and serve
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
