Chocolate Soufflé Biscotti

A unique dessert that combines the lightness of chocolate soufflé with the crunch of biscotti.

Chocolate Soufflé Biscotti

A creative twist on traditional biscotti, infused with the rich flavor of chocolate soufflé.

Ingredients:

For the biscotti dough:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the chocolate soufflé filling:

  • 8 ounces high-quality dark chocolate (at least 70% cocoa), finely chopped
  • 2 tablespoons granulated sugar
  • 2 large egg yolks
  • 2 tablespoons unsalted butter, softened

Instructions:

Step 1: Prepare the biscotti dough

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, use an electric mixer to beat the sugar and butter until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.

Step 2: Prepare the chocolate soufflé filling

  1. Melt the chopped chocolate in a double boiler or in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.
  2. In a separate bowl, whisk together sugar and egg yolks.
  3. Gradually pour the melted chocolate into the sugar mixture, whisking continuously.

Step 3: Assemble and bake the biscotti

  1. Divide the dough in half and shape each half into a log about 12 inches long.
  2. Place the logs on the prepared baking sheet, leaving at least 2 inches of space between them.
  3. Bake for 25-30 minutes or until lightly golden.
  4. Remove from oven and let cool on a wire rack.

Step 4: Prepare the chocolate soufflé filling

  1. Allow the biscotti to cool completely.
  2. Cut each log into 1/2-inch slices.
  3. Dip each slice into the melted chocolate, coating both sides evenly.
  4. Place the coated biscotti on a baking sheet lined with parchment paper.

Step 5: Bake and serve

  1. Refrigerate for at least 30 minutes to set the chocolate.
  2. Serve chilled or at room temperature.

Note: The resulting biscotti will have a crispy exterior and a soft interior, with a rich, chocolatey flavor throughout.
