Ingredients:

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 1/4 cup creamy peanut butter
  • 2 cups semisweet chocolate chips
  • 1 cup heavy cream
  • Whipped cream and chopped peanuts for topping

Instructions:

Make the Crust:

  1. Preheat oven to 350°F.
  2. In a medium bowl, mix together graham cracker crumbs and sugar.
  3. Add melted butter and stir until well combined.
  4. Press mixture into the bottom of a 9-inch pie dish.
  5. Bake for 10 minutes.

Make the Filling:

  1. In a large mixing bowl, beat cream cheese until smooth.
  2. Gradually add confectioners' sugar and mix until combined.
  3. Beat in peanut butter until well combined.
  4. Melt chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  5. Fold melted chocolate into peanut butter mixture until well combined.
  6. Pour filling into baked pie crust.

Chill and Serve:

  1. Refrigerate pie for at least 2 hours or overnight.
  2. Top with whipped cream and chopped peanuts before serving.

Note: You can also make individual-sized pies using mini cast-iron skillets or ramekins.
