Chocolate Hazelnut Mousse Brownies
Ingredients
- 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing the pan
- 2 cups of sugar
- 4 large eggs
- 1/2 cup of unsweetened cocoa powder
- 1 teaspoon of vanilla extract
- 1 and 1/4 cups of all-purpose flour
- 1 teaspoon of salt
- 1 cup of chopped hazelnuts
- 1 cup of semisweet chocolate chips
Instructions
Preparing the Brownies
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan with butter and line it with parchment paper.
- Melt the butter and sugar in a medium saucepan over low heat, stirring occasionally. Bring to a simmer and cook for about 5 minutes or until the butter has melted.
- Remove from the heat and stir in the cocoa powder until well combined. Let cool slightly.
- Stir in the eggs one at a time, followed by the vanilla extract. Add the flour and salt, mixing until just combined.
- Fold in the chopped hazelnuts.
Baking the Brownies
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Remove from the oven and let cool completely in the pan.
Preparing the Chocolate Mousse
- In a double boiler or a heatproof bowl set over a pot of simmering water, melt the chocolate chips, stirring occasionally.
- Once melted, remove from the heat and stir in 1/4 cup of heavy cream until well combined.
- Let cool to room temperature.
Assembling the Brownies
- Cut the cooled brownie into squares or use a cookie cutter to create shapes.
- Top each brownie with a dollop of chocolate mousse.
- Garnish with additional chopped hazelnuts, if desired.
Notes
- For a more intense chocolate flavor, you can add 1-2 tablespoons of instant coffee powder to the batter.
- If you prefer a lighter texture in your brownies, you can add an extra egg white or use aquafaba as a substitute.
- You can also toast the hazelnuts for added depth of flavor by spreading them on a baking sheet and baking at 350°F (175°C) for 5-7 minutes, stirring occasionally.
