A twist on the classic apple crumble, these bars combine a chewy cookie crust with chunks of dark chocolate and a crunchy oat topping.

Chocolate Chip Cookie Crumble Bars

A creative take on the traditional apple crumble, this recipe transforms the classic into a decadent dessert bar. A chewy cookie base, loaded with dark chocolate chips, is topped with a crunchy oat mixture and baked until golden brown.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter (at room temperature)
  • 3/4 cup white granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions:

For the Cookie Base:

  1. Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to cream together butter and sugars until light and fluffy. Beat in eggs one at a time, followed by vanilla extract.
  4. Gradually mix in the dry ingredients until just combined, being careful not to overmix. Stir in chocolate chips.
  5. Press the dough evenly into the prepared baking dish.

For the Crumble Topping:

  1. In a small bowl, whisk together oats and brown sugar. Add cold butter and use your fingers or a pastry blender to work it into the oat mixture until crumbly.
  2. Spread this topping over the cookie base, ensuring an even layer.

Baking:

  1. Bake for 40-45 minutes, or until the top is golden brown and the edges are set. Let cool completely in the pan before refrigerating overnight or freezing for up to a month.

Notes:

These bars keep well at room temperature for up to three days, stored in an airtight container. Freeze for longer storage and thaw at room temperature when needed.
