Chocolate Chip Cookie Crumble Bars
A creative take on the traditional apple crumble, this recipe transforms the classic into a decadent dessert bar. A chewy cookie base, loaded with dark chocolate chips, is topped with a crunchy oat mixture and baked until golden brown.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter (at room temperature)
- 3/4 cup white granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions:
For the Cookie Base:
- Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, use an electric mixer to cream together butter and sugars until light and fluffy. Beat in eggs one at a time, followed by vanilla extract.
- Gradually mix in the dry ingredients until just combined, being careful not to overmix. Stir in chocolate chips.
- Press the dough evenly into the prepared baking dish.
For the Crumble Topping:
- In a small bowl, whisk together oats and brown sugar. Add cold butter and use your fingers or a pastry blender to work it into the oat mixture until crumbly.
- Spread this topping over the cookie base, ensuring an even layer.
Baking:
- Bake for 40-45 minutes, or until the top is golden brown and the edges are set. Let cool completely in the pan before refrigerating overnight or freezing for up to a month.
Notes:
These bars keep well at room temperature for up to three days, stored in an airtight container. Freeze for longer storage and thaw at room temperature when needed.
