Carne Guisada con Papas y Cebolla

Ingredients:
- 1 pound beef brisket or beef shank, cut into large chunks
- 2 medium potatoes, peeled and cubed
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- 2 cups beef broth
- 2 tablespoons chopped fresh cilantro
Instructions:
Step 1: Brown the Beef
Heat the oil in a large Dutch oven over medium-high heat. Add the beef chunks and cook until browned on all sides, about 5 minutes per side. Remove from heat and set aside.
Step 2: Sauté the Onion and Garlic
Reduce the heat to medium and add more oil if necessary. Add the sliced onion and cook, stirring occasionally, until softened and lightly caramelized, about 10-12 minutes. Add the minced garlic and cook for an additional minute.
Step 3: Add Potatoes and Spices
Add the cubed potatoes, cumin, paprika, and cayenne pepper (if using) to the pot. Stir to combine with the onion mixture.
Step 4: Return the Beef and Broth
Return the browned beef chunks to the pot, along with the beef broth. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 1 hour or until the meat is tender and the potatoes are cooked through.
Step 5: Season and Serve
Season with salt and black pepper to taste. Garnish with chopped cilantro before serving.
