A twist on the classic banana cream pie, these bars are perfect for a crowd.

Caramelized Banana Cream Pie Bars

Ingredients

For the crust

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted

For the banana layer

  • 3 large ripe bananas
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the caramel sauce

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1 tablespoon unsalted butter

For the whipped cream

  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. Prepare the crust by mixing together flour, granulated sugar, and brown sugar in a medium bowl. Stir in melted butter until just combined.
  3. Press mixture into prepared pan. Bake for 20-25 minutes or until lightly golden. Let cool completely.
  4. Caramelize bananas by cooking them in a skillet over medium heat with sugar, butter, and vanilla extract for about 5 minutes per side, or until they develop a nice brown color.
  5. Prepare the caramel sauce by combining heavy cream, granulated sugar, corn syrup, and butter in a small saucepan. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until thickened slightly.
  6. Assemble the bars by spreading caramelized banana layer over cooled crust, followed by a drizzle of caramel sauce.
  7. Top with whipped cream made from heavy cream, confectioners' sugar, and vanilla extract. Refrigerate for at least 2 hours to allow flavors to meld together.
  8. Cut into bars and serve chilled.

Variations

  • Use fresh berries or chopped nuts to add an extra layer of flavor and texture.
  • Substitute the caramel sauce with a store-bought version or make your own dulce de leche instead.
  • For a more indulgent treat, sprinkle some chopped chocolate chips on top before serving.
