Caramelized Banana Cream Pie Bars
Ingredients
For the crust
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/2 cup unsalted butter, melted
For the banana layer
- 3 large ripe bananas
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
For the caramel sauce
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup light corn syrup
- 1 tablespoon unsalted butter
For the whipped cream
- 1 cup heavy cream
- 2 tablespoons confectioners' sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
- Prepare the crust by mixing together flour, granulated sugar, and brown sugar in a medium bowl. Stir in melted butter until just combined.
- Press mixture into prepared pan. Bake for 20-25 minutes or until lightly golden. Let cool completely.
- Caramelize bananas by cooking them in a skillet over medium heat with sugar, butter, and vanilla extract for about 5 minutes per side, or until they develop a nice brown color.
- Prepare the caramel sauce by combining heavy cream, granulated sugar, corn syrup, and butter in a small saucepan. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until thickened slightly.
- Assemble the bars by spreading caramelized banana layer over cooled crust, followed by a drizzle of caramel sauce.
- Top with whipped cream made from heavy cream, confectioners' sugar, and vanilla extract. Refrigerate for at least 2 hours to allow flavors to meld together.
- Cut into bars and serve chilled.
Variations
- Use fresh berries or chopped nuts to add an extra layer of flavor and texture.
- Substitute the caramel sauce with a store-bought version or make your own dulce de leche instead.
- For a more indulgent treat, sprinkle some chopped chocolate chips on top before serving.
