Caramel Pecan Apple Crumble Tarts

Ingredients:

For the Pastry Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 large egg

For the Filling:

  • 6-8 medium-sized apples, peeled and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup caramel sauce (see note)
  • 1/2 cup chopped pecans

For the Caramel Pecan Crumble:

  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 cup chopped pecans

Instructions:

  1. Make the Pastry Dough: In a large mixing bowl, combine the flour and salt. Add the cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and 1 tablespoon of ice-cold water. Add this mixture to the flour mixture and stir with a fork until the dough starts to come together. Turn the dough out onto a lightly floured surface and knead a few times until it becomes smooth and pliable. Form the dough into a flat disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Mix until the apples are evenly coated with the dry ingredients.
  3. Assemble the Tarts: On a lightly floured surface, roll out the chilled pastry dough to a thickness of about 1/8 inch (3 mm). Use a cookie cutter or the rim of a glass to cut out circles of dough. You should be able to get about 12-15 circles.
  4. Fill and Crimp the Tarts: Spoon a small amount of apple filling onto one half of each circle, leaving a 1/2 inch (1 cm) border around the edges. Fold the other half of the pastry dough over the filling, pressing the edges to seal. Use a fork to crimp the edges and create a decorative border.
  5. Prepare the Caramel Pecan Crumble: In a medium bowl, combine the flour, brown sugar, and cold butter. Use your fingers or a pastry blender to work the mixture until it resembles coarse crumbs. Stir in the chopped pecans.
  6. Top with Caramel Pecan Crumble: Just before baking, sprinkle a small amount of caramel sauce over the filling in each tart. Then top with a spoonful of caramel pecan crumble mixture.
  7. Bake and Serve: Preheat your oven to 375°F (190°C). Place the tarts on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until the pastry is golden brown and the filling is tender. Allow the tarts to cool slightly before serving.

Note: To make caramel sauce from scratch, combine equal parts sugar and heavy cream in a small saucepan. Place over medium heat and cook, stirring constantly, until the mixture turns a deep amber color. Remove from heat and stir in 1/2 teaspoon of sea salt and 1 tablespoon of unsalted butter. Let cool before using.
