A twist on the classic apple crumble, these bars combine a buttery shortbread crust with a layer of caramelized apples and a crunchy oat topping.

Caramel Apple Pie Crumble Bars

These decadent bars combine the best parts of an apple crumble, a pie, and a cookie in one delicious package. A buttery shortbread crust gives way to a layer of caramelized apples, topped with a crunchy oat mixture and baked until golden brown.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tbsp vanilla extract
  • 6-8 medium apples, peeled and sliced
  • 1/4 cup caramel sauce (such as dulce de leche)
  • 1 cup rolled oats
  • 1/2 cup chopped walnuts

Instructions:

Make the Shortbread Crust:

  1. Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Add butter and mix until a crumbly dough forms. Press into prepared baking dish.
  3. Bake for 18-20 minutes or until lightly golden.

Prepare the Apple Filling:

  1. In a large skillet, combine sliced apples, granulated sugar, brown sugar, and vanilla extract. Cook over medium heat, stirring occasionally, until apples are caramelized and tender.
  2. Stir in caramel sauce to combine.

Assemble the Bars:

  1. Arrange apple mixture evenly over shortbread crust.
  2. Sprinkle rolled oats and chopped walnuts over top of apple layer.

Bake and Cool:

  1. Bake for an additional 25-30 minutes or until topping is golden brown and crispy.
  2. Allow bars to cool completely in pan before cutting into squares and serving.
