Caramel Apple Pie Crumble Bars
These decadent bars combine the best parts of an apple crumble, a pie, and a cookie in one delicious package. A buttery shortbread crust gives way to a layer of caramelized apples, topped with a crunchy oat mixture and baked until golden brown.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 tbsp vanilla extract
- 6-8 medium apples, peeled and sliced
- 1/4 cup caramel sauce (such as dulce de leche)
- 1 cup rolled oats
- 1/2 cup chopped walnuts
Instructions:
Make the Shortbread Crust:
- Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Add butter and mix until a crumbly dough forms. Press into prepared baking dish.
- Bake for 18-20 minutes or until lightly golden.
Prepare the Apple Filling:
- In a large skillet, combine sliced apples, granulated sugar, brown sugar, and vanilla extract. Cook over medium heat, stirring occasionally, until apples are caramelized and tender.
- Stir in caramel sauce to combine.
Assemble the Bars:
- Arrange apple mixture evenly over shortbread crust.
- Sprinkle rolled oats and chopped walnuts over top of apple layer.
Bake and Cool:
- Bake for an additional 25-30 minutes or until topping is golden brown and crispy.
- Allow bars to cool completely in pan before cutting into squares and serving.
