Caramel Apple Pecan Pie Bars
A new take on classic apple pie, these bars bring together the comforting flavors of caramel, crunchy pecans, and tender apples in a delightful shortbread crust.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 cup cold unsalted butter, cut into small pieces
- 3/4 cup granulated sugar
- 2 large eggs
- 2 tbsp vanilla extract
- For the filling:
- 6-8 medium-sized apples, peeled and sliced
- 1/2 cup caramel sauce (homemade or store-bought)
- 1/2 cup chopped pecans
Instructions
Preparing the Crust
- Preheat: Preheat your oven to 350°F (180°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream butter and sugar: In a large bowl using an electric mixer, cream together the cold butter until it's light and fluffy. Gradually add the granulated sugar, beating until well combined.
- Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
- Combine with dry ingredients: With the mixer on low speed, gradually incorporate the flour mixture until it resembles coarse crumbs.
Assembling and Baking
- Press crust mixture: Evenly press the crumb mixture into the prepared baking dish. Bake for 20-25 minutes or until golden brown.
- Prepare apples and caramel: While the crust is baking, mix together the sliced apples and caramel sauce in a separate bowl. Set aside once the crust is done.
- Assemble bars: Once the crust has cooled slightly, layer the apple mixture over it. Sprinkle the chopped pecans on top of the apples.
- Bake again: Return to the oven for an additional 25-30 minutes or until the filling is bubbly and the edges are golden brown.
Serving
- Let cool completely: Allow the bars to cool completely in the dish, then refrigerate them for at least 2 hours before cutting into squares.
- Serve chilled: Serve chilled, dusting with powdered sugar if desired.
