Caramel Apple Panna Cotta
Servings: 6-8
Ingredients:
- 2 cups milk (whole, low-fat or nonfat)
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 1/4 tsp salt
- 2 apples, peeled and diced (Granny Smith or other sweet-tart variety)
- 1/4 cup caramel sauce (store-bought or homemade)
Instructions
Prepare the Apples:
- In a small bowl, combine the sugar and cinnamon.
- Toss the apple pieces in the sugar mixture until evenly coated.
Make the Panna Cotta:
- Combine the milk, heavy cream, granulated sugar, vanilla extract, and salt in a medium saucepan.
- Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
- Remove from the heat and let cool slightly.
Add Gelatin:
- Sprinkle the gelatin over 1/4 cup of cold water in a small bowl and let sit for 2-3 minutes to soften.
- Add the softened gelatin to the cooled milk mixture and whisk until dissolved.
Pour into Molds:
- Pour the panna cotta mixture into small individual serving molds or ramekins.
- Refrigerate for at least 4 hours, or overnight.
Prepare the Caramel Sauce:
- Heat a tablespoon of butter in a saucepan over medium heat.
- Add 1/4 cup brown sugar and 1/4 cup heavy cream. Stir until the sugar has dissolved.
- Bring to a boil, then reduce the heat and simmer for 5 minutes, or until thickened slightly.
Assemble:
- Just before serving, top each chilled panna cotta with a spoonful of caramel sauce and some diced apples.
- Serve immediately.
Note: For an extra touch, sprinkle some chopped nuts (walnuts or almonds) over the caramel sauce for added crunch.
