Caramel Apple Panna Cotta

Servings: 6-8

Ingredients:

  • 2 cups milk (whole, low-fat or nonfat)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 apples, peeled and diced (Granny Smith or other sweet-tart variety)
  • 1/4 cup caramel sauce (store-bought or homemade)

Instructions

Prepare the Apples:

  1. In a small bowl, combine the sugar and cinnamon.
  2. Toss the apple pieces in the sugar mixture until evenly coated.

Make the Panna Cotta:

  1. Combine the milk, heavy cream, granulated sugar, vanilla extract, and salt in a medium saucepan.
  2. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
  3. Remove from the heat and let cool slightly.

Add Gelatin:

  1. Sprinkle the gelatin over 1/4 cup of cold water in a small bowl and let sit for 2-3 minutes to soften.
  2. Add the softened gelatin to the cooled milk mixture and whisk until dissolved.

Pour into Molds:

  1. Pour the panna cotta mixture into small individual serving molds or ramekins.
  2. Refrigerate for at least 4 hours, or overnight.

Prepare the Caramel Sauce:

  • Heat a tablespoon of butter in a saucepan over medium heat.
  • Add 1/4 cup brown sugar and 1/4 cup heavy cream. Stir until the sugar has dissolved.
  • Bring to a boil, then reduce the heat and simmer for 5 minutes, or until thickened slightly.

Assemble:

  1. Just before serving, top each chilled panna cotta with a spoonful of caramel sauce and some diced apples.
  2. Serve immediately.

Note: For an extra touch, sprinkle some chopped nuts (walnuts or almonds) over the caramel sauce for added crunch.
