Caramel Apple Galette with Pistachio Crust
Ingredients
For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup ground pistachios
- 1/4 cup confectioners' sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cut into small pieces
For the filling:
- 6-8 medium-sized apples, peeled and sliced
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
For the caramel sauce:
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon unsalted butter
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the flour, pistachios, confectioners' sugar, and salt.
- Add the cold butter to the bowl and use a pastry blender or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
- Press the mixture into a 9-inch (23cm) round baking dish.
- In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Mix until the apples are evenly coated with the dry ingredients.
- Arrange the apple slices on top of the crust in a spiral pattern, leaving a 1-inch (2.5cm) border around the edges.
- Drizzle the melted butter over the apples and sprinkle with cinnamon.
- Fold the edges of the crust up over the filling to form a crusty galette.
- Bake the galette for 40-45 minutes, or until the crust is golden brown and the apples are tender.
- While the galette is baking, prepare the caramel sauce by combining the heavy cream, granulated sugar, and unsalted butter in a small saucepan.
- Bring the mixture to a boil over medium heat and cook for 5-7 minutes, or until the caramel sauce thickens slightly.
- Remove the galette from the oven and let it cool for 10 minutes.
- Drizzle the warm caramel sauce over the top of the galette and serve warm.
Notes
- This recipe makes one large galette that serves 8-10 people. You can also make individual galettes using a 6-inch (15cm) round baking dish.
- If you prefer a crisper crust, bake the galette for an additional 5-10 minutes or until it reaches your desired level of doneness.
- You can store any leftover galette in an airtight container at room temperature for up to 3 days.
