A twist on the classic apple galette, this recipe features a crunchy pecan crust and a caramel-infused filling.

Caramel Apple Galette with Pecan Crust

Ingredients

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 cup pecans, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, chilled and cut into small pieces

For the Filling:

  • 6-8 medium-sized apples, peeled and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup caramel sauce (homemade or store-bought)

Instructions

Make the Crust:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, and salt.
  3. Add the chopped pecans, cinnamon, nutmeg, and cold butter to the dry ingredients.
  4. Use a pastry blender or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Press the mixture evenly into the bottom of a 9-inch (23cm) tart pan with a removable bottom.

Prepare the Filling:

  1. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Mix until the apples are evenly coated.
  2. Pour the caramel sauce over the apple mixture and toss until the apples are well-coated.

Assemble and Bake:

  1. Arrange the apple mixture in a spiral pattern on top of the pecan crust.
  2. Fold the edges of the crust up over the filling, pressing gently to seal.
  3. Brush the crust with a little bit of milk or beaten egg for a golden glaze.
  4. Bake the galette for 40-45 minutes, or until the crust is golden brown and the apples are tender.
  5. Allow the galette to cool on a wire rack for at least 30 minutes before serving.

Tips

  • To make the caramel sauce from scratch, combine 1 cup granulated sugar, 1/2 cup water, and 1 tablespoon unsalted butter in a small saucepan. Bring to a boil over medium heat, then reduce the heat to low and simmer for about 5-7 minutes, or until the sauce turns a deep amber color.
  • If using store-bought caramel sauce, be sure to choose a high-quality brand that's free from added preservatives or flavorings.
