Caramel Apple Crumble Brownies

A rich and fudgy brownie filled with the warmth of caramel and the crunch of an apple crumble topping.

Caramel Apple Crumble Brownies

A unique twist on a classic dessert, these brownies feature the gooey goodness of caramel and the satisfying crunch of an apple crumble topping.

Ingredients

For the Brownie Layer

  • 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing the pan
  • 2 cups of sugar
  • 4 large eggs
  • 1 teaspoon of pure vanilla extract
  • 1 and 1/4 cups of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1 teaspoon of salt
  • 1 cup of semi-sweet chocolate chips

For the Caramel Layer

  • 1 cup of granulated sugar
  • 1/2 cup of light corn syrup
  • 1/2 cup of heavy cream
  • 2 tablespoons of unsalted butter
  • 1 teaspoon of sea salt

For the Apple Crumble Topping

  • 2 apples, peeled and sliced
  • 1/4 cup of granulated sugar
  • 2 tablespoons of all-purpose flour
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1/4 cup of unsalted butter, cut into small pieces

Instructions

Preheat and Prepare the Pan

Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan with butter and line it with parchment paper.

Make the Brownie Layer

In a medium bowl, whisk together the flour, cocoa powder, and salt. Set aside. In a large bowl, use an electric mixer to beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Gradually mix in the dry ingredients until just combined, being careful not to overmix. Stir in the chocolate chips.

Pour the Brownie Layer into the Prepared Pan

Spread the brownie mixture evenly into the prepared pan.

Prepare the Caramel Layer

In a small saucepan, combine the sugar, corn syrup, and 1/4 cup of heavy cream. Cook over medium heat, stirring occasionally, until the caramel turns a deep amber color. Remove from heat and slowly pour in the remaining 3/4 cup of heavy cream. The mixture will bubble vigorously, so be careful not to splash any of the hot caramel.

Drizzle the Caramel Layer Over the Brownie Layer

Pour the warm caramel over the brownie layer in the pan.

Prepare the Apple Crumble Topping

In a separate bowl, mix together the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Dot the top of the apple mixture with the pieces of butter.

Top the Brownie Layer with the Apple Crumble Mixture

Spread the apple crumble topping evenly over the caramel layer in the pan.

Bake and Let Cool

Bake for 35-40 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely in the pan before slicing and serving.
