Apple Cinnamon Swirl Biscotti

A variation on the classic Italian biscotti, featuring the warmth of cinnamon and the sweetness of caramelized apples.

Apple Cinnamon Swirl Biscotti

Introduction

These crunchy biscotti are infused with the warm spices of cinnamon and the sweet flavor of caramelized apples. Perfect for dipping in coffee or tea, these treats will transport you to the Tuscan countryside.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 cup diced apples (Granny Smith or other sweet-tart variety)
  • Confectioners' sugar, for dusting

Instructions

Step 1: Preheat and Prepare the Biscotti Dough

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder, granulated sugar, brown sugar, cinnamon, and salt. Set aside.

In a large bowl, using an electric mixer, beat the butter until creamy, about 2 minutes. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 2: Fold in Apples and Scrape Batter

Fold in diced apples until they are evenly distributed throughout the batter.

Step 3: Chill the Dough and Shape Biscotti

Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes or up to 2 hours. When ready, remove from refrigerator and let sit at room temperature for 10-15 minutes.

On a lightly floured surface, roll out the dough to about 1/4 inch thickness.

Step 4: Bake and Cool Biscotti

Bake for 25-30 minutes or until golden brown around edges. Rotate pan halfway through baking time.

Once baked, remove from oven and transfer biscotti to a wire rack to cool completely.

Step 5: Glaze with Cinnamon Sugar

In a small bowl, mix together powdered sugar and cinnamon. Drizzle the mixture over cooled biscotti in a zigzag pattern.
