Servings: 12

Prep Time: 20 minutes Cook Time: 25 minutes Total Time: 45 minutes

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup apple cider
  • 1 cup white chocolate chips

Instructions:

  1. Preheat: Preheat your oven to 350°F (180°C). Grease an 8-inch x 8-inch baking pan and set it aside.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar: In a large bowl, use an electric mixer to cream together butter and sugar until light and fluffy, about 2 minutes.
  4. Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
  5. Combine wet and dry ingredients: Gradually add the flour mixture to the wet ingredients and mix until just combined.
  6. Stir in apple cider and white chocolate: Stir in the apple cider and white chocolate chips.
  7. Bake: Pour the batter into the prepared baking pan and smooth the top. Bake for 25 minutes or until a toothpick inserted 2 inches from the pan's edge comes out clean.
  8. Cool: Let the blondies cool completely in the pan before cutting into squares to serve.

Notes:

  • For best results, use high-quality white chocolate chips.
  • If you prefer a stronger apple flavor, increase the amount of apple cider to 3/4 cup or more to taste.
  • These blondies are perfect for fall and winter seasons when warm spices like cinnamon and nutmeg complement them beautifully.
