Make the Cookies
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt.
- In a large bowl, use an electric mixer to beat the butter and sugars until light and fluffy, about 2 minutes.
- Beat in the eggs one at a time.
- Gradually mix in the dry ingredients until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Cut into desired shapes using a cookie cutter.
- Place on the prepared baking sheet, leaving about 1 inch of space between each cookie.
- Bake for 10-12 minutes or until firm to the touch.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- In a small bowl, whisk together 1/2 cup powdered sugar and 2 tablespoons apple cider until smooth.
- Adjust the consistency of the glaze by adding more powdered sugar or apple cider as needed.
