Apple Cider Donuts with Lemon Glaze

Apple Cider Donuts with Lemon Glaze

Ingredients:

For the donuts:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup whole milk
  • 2 teaspoons active dry yeast
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup apple cider

For the lemon glaze:

  • 1 cup powdered sugar
  • 2 tablespoons freshly squeezed lemon juice

Instructions:

  1. Make the donuts: In a medium bowl, whisk together flour, sugar, and yeast.

  2. Add milk, melted butter, egg, and apple cider to dry ingredients. Mix until a smooth batter forms.

  3. Cover bowl with plastic wrap and let dough rise in a warm place for 1 hour.

  4. Preheat oil in a deep frying pan to 350°F (175°C).

  5. Using a cookie scoop or spoon, drop rounded balls of dough into hot oil.

  6. Cook donuts for 2-3 minutes on each side, until golden brown.

  7. Remove from oil and let cool on paper towels.

  8. Make the lemon glaze: In a small bowl, whisk together powdered sugar and lemon juice until smooth.

  9. Dip cooled donuts in lemon glaze to coat.

Tips:

  • For an extra crispy coating, you can chill donuts in refrigerator for 30 minutes before frying.
  • To ensure even cooking, do not overcrowd the pan with too many donuts at once.
