Apple Cider Donuts with Lemon Glaze
Ingredients:
For the donuts:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup whole milk
- 2 teaspoons active dry yeast
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 cup apple cider
For the lemon glaze:
- 1 cup powdered sugar
- 2 tablespoons freshly squeezed lemon juice
Instructions:
Make the donuts: In a medium bowl, whisk together flour, sugar, and yeast.
Add milk, melted butter, egg, and apple cider to dry ingredients. Mix until a smooth batter forms.
Cover bowl with plastic wrap and let dough rise in a warm place for 1 hour.
Preheat oil in a deep frying pan to 350°F (175°C).
Using a cookie scoop or spoon, drop rounded balls of dough into hot oil.
Cook donuts for 2-3 minutes on each side, until golden brown.
Remove from oil and let cool on paper towels.
Make the lemon glaze: In a small bowl, whisk together powdered sugar and lemon juice until smooth.
Dip cooled donuts in lemon glaze to coat.
Tips:
- For an extra crispy coating, you can chill donuts in refrigerator for 30 minutes before frying.
- To ensure even cooking, do not overcrowd the pan with too many donuts at once.
